Sokseh - سوكسه Lazy Cake

This is a no bake dessert that is so easy to make and yet so incredibly delicious! The hardest part about it is waiting for it into cool in the freezer!


I don't exactly know where the name came from as it sounds more French than Arabic, but it's very popular throughout the Middle East and especially in Syria. Made with Maria biscuit cookies, cocoa powder, milk, sugar and butter. I guarantee you are going to love it!

My Mom made this dessert for us when we were younger and it was always the star of any birthday party. Everyone loves Sokseh!

Since there is no baking involved, you can easily make this #sokseh recipe with your kids. They will enjoy helping you make it as I did when with my Mom back in Syria.

Here is what you need:


2. Unsalted butter

3. Powdered sugar

4. Milk

6. 1 Egg

7. Vanilla extract or powder (optional)

8. Hot water (optional)



Prepare the Maria Cookies

Place cookies into a large bowl and break into chunks.


Make the Chocolate Syrup

In a small pot, melt butter. Add milk and cocoa powder and mix well until no clumps.

Add powdered Sugar and mix well.


Add a little hot water to the mixture if it appears too thick.


Add 1 teaspoon Vanilla extract or powered.


Turn off heat and add a beaten egg to the mixture and mix fast to incorporate. The egg will add more thickness to the chocolate syrup.


Let it cool.


Pour the chocolate syrup over the cookies and mix well till all coated.

Place mixture in Ziploc bags and roll tightly. Should look like a thick burrito or a thick sushi roll!


Freeze for 2 to 4 hours.


Take out of Freezer, unroll to remove the Ziploc bag and cut into circles like you would cut a sushi roll. And that is it!
